Mung Bean Salad



Spring vegetables, a citrus palette and a high protein snack.


Mung bean salads are a great go-to during warm weather because it is easy to make and gives you the perfect summer blend.


If you are looking for a crunchy snack to munch on while also maintaining a healthy snacking habit, this one is for you.


What you will need:


2 cups of sprouted mung beans (check out this post on how to sprout mung beans)

½ onion – diced

1 avocado – diced

Hand full of cilantro – chopped

1 tomato – diced


Salt to taste

½ teaspoon cayenne pepper

2 tablespoons pomegranate seeds



  • Throw everything in a bowl (except the cilantro)
  • Mix well
  • If you need more salt, lemon or cayenne powder – add accordingly
  • Garnish with cilantro


Enjoy with a lavender lemonade
